  • ⅓ head romaine lettuce - chopped
  • ½ bunch spinach - fresh
  • 1 cup strawberries - cleaned bite size
  • ⅓ sweet onion - thinly sliced
  • black pepper - fresh ground
Yogurt Mayonnaise Dressing
  • ¼ cup Yogurt
  • ¼ cup mayonnaise
  • 1 tablespoon Lemon Juice - fresh squeezed
  • 1 teaspoon honey
Instructions
Directions/Method for Strawberry Spinach Romaine Salad - quick, easy to make, with delicious, homemade Yogurt Mayonnaise Dressing
  1. Wash and dry ½ bunch of spinach, remove the stems
  2. Rip the dry, stemless spinach leaves into bite size pieces and put into a mixing bowl
  3. Clean and dry ⅓ head of Romaine lettuce
  4. Rip the dry Romaine leaves into bite size pieces and put into the mixing bowl - gently mix the contents of the bowl
  5. Wash, dry and take the stems off the strawberries
  6. Cut 1 cup/250 ml of strawberries quarters
  7. Peel and thinly slice ⅓ of a sweet onion and add to the bowl - mix contents of the bowl
Preparing Yogurt Mayonnaise Dressing
  1. Put ¼ cup/60 ml of yogurt into a mixing bowl
  2. Put ¼ cup/60 ml of mayonnaise into a mixing bowl - whisk the bowl contents together
  3. Add 1 tablespoon/15 ml of freshly squeezed lemon juice to the mixing bowl
  4. Add 1 teaspoon/5 ml of honey to the mixing bowl
  5. Whisk/mix the contents of the bowl together well
If you are pouring the dressing over the contents of the salad bowl, use just enough to lightly coat the contents - left over Yogurt Mayonnaise Dressing can be used as a dip with vegetables or crackers. Sprinkle strawberry quarters over the salad.
