  • ½ cup
  • 3 egg yolks
  • 1 tablespoon lemon juice
  • pinch cayenne pepper
  • pinch salt
Instructions

  2. Melt ½ cup 125 ml in the microwave - the butter should be slightly bubbling at the edges - this can take from 30 - 90 seconds depending on your microwave
  3. Separate the yolks of the 3 eggs from the egg whites and put them into the mixing bowl
  4. Add 1 tablespoon/15 ml of lemon juice to the egg whites
  5. Add a pinch of cayenne pepper and and a pinch of salt and mix the ingredients in the bowl
  6. Slowly ass the melted butter to the mixture in the bowl while whisking the contents
  7. Put the mixture back into the microwave for another 30- 45 seconds to thicken the sauce
  8. Whisk again until thick
  9. Hollandaise Sauce can be stored in the refrigerator or frozen and used later.
